A risk assessment from DEFRA concludes that - provided certain treatment standards are met and suitable controls are in place - the risks to human and animal health from the composting or biogas digestion of catering wastes containing meat, followed by its application to land, are acceptably low. The risks to plant health have yet to be assessed in detail and should be managed by following existing guidance on composting.
