I think you will find that there is no opt out from the 20 minute break. The opt out applies only to 48 hour limit.

Be careful about charging for H&S training in relation to statutory requirements as Section 9 of the Health and Safety at Work etc Act expressly prohibits it.

I suppose if you had your way, you would also have dismissed women on getting married. That's what used to happen in the dark ages because that also did not fit in with the culture of the work environment!
