Could anyone advise me on what would be an acceptable time between consultation meetings 1 and 2 and then the formal dismissal meeting for an individual redundacy?
As far as i can understand, consultation meeting 1 would used to inform the member of staff of the possible redundancy and discuss any alternatives, at meeting 2 we would discuss any possible solutions thought about after meeting 1, and meeting 3 would be the final dismissal meeting if no suitable alternatives are put forward.
I am just not sure how long to wait after meting 1 before meeting 2 based on the assuption that there are no suitable vacancies to transfer to.

It depends on the circumstances. If two people were at risk, and there was one continuing role and one person to be redundant, then I would expect that decision to take a couple of weeks max.
If on the other hand we are closing a factory with 5,000 employees, I can easily imagine the decisions would take six months minimum.
