As a member of a sporting club I have been asked to work behind a bar and at a beer festival in a voluntary capacity Although we are briefed in a 'how to pour a pint' capacity - we receive no H&S information relating to evacuation procedures, manual handling, threat of robbery etc. My question is should we have that training and should we sign a sheet to say we have had it - even though we are volunteers?

You certainly should. A volunteer is most certainly a "worker" for the purposes of HSWA74.
Sorry to say it, but being a marshall for a race is a typical type of sports club volunteer activity; serving pints seems just a little too much like exploitation to me!
