Is it correct that a employee has to take his break (30mins) after he has done 4.5hrs into his shift. or could he take it after 7.5hrs.

No it's not true! Under the Working Time Regulations all workers have the right to a 20 minute rest break where the worker's daily working time is more than 6 hours.
The break is to be uninterrupted and the worker is entitled to spend the time away from his workstation (if he has one).
Note that the worker does not have to work 6 hours BEFORE he gets the break. If he is scheduled to work for 6 hours then the rest break is to be taken in the 6 hour period.

still 20 minutes under the Working time Regulations- Regulation 12(1) says "where a workers daily working time is more than 6 hours he is entitled to a rest break". Regulation 12(2) says that this rest break must be "an uninterrupted period of not less that 20 minutes...".
Remember that a worker is also entitled to daily rest of 11 consecutive hours in each 24 hour period.

the break should also not be at the beginning or the end of a six hour shift i.e. meaning that the employee can't plan to finish 20 mins eary and claim it as their break

The regulation 20minute break for 6hrs worked in the statutory minimum. Depending on the type of work,eg.monotonous,tiring,heavy etc considerations have to be given to the health and safety of the employee.
On a 12 hour shift 2 x 20 mins break would be acceptable but additional grace and favour breaks may be necessary to avoid stress,fatigue etc.
Consideration should also be given to the facilities for breaks ie how far away is the canteen?
Many employers allow more breaks.
My motto is ....look after the employees and they will look after the business.

i was always told when i looked after about 40 staff that if a 12 hour shift passed over lunch time, that i had to give my employees their 2*20 mins paid breaks and i had to allow them an hour unpaid over around noon. IE 6am -6pm would mean a break at 9-920, then 1230-130 and then 4-420 etc.
i understand the 20 min rule, but surely emploees are entitled to be able to eat a decent meal when the whole day is spent at work, missing out potenitally on all normal meal times. 20 mins is clearly not enough time get a good meal inside you?
